Drizzle some extra-virgin olive oil into a pan and sauté the onion for a few minutes before adding the aubergine. Cook for a further five minutes. Add the diced carrot and courgette and finish cooking, taking care not to overcook the vegetables, which should retain some crispness. Adjust the seasoning, adding salt if required and a pinch of oregano, and mix well. Remove from the heat.

To make the basket: moisten the pane carasau under running water and lay out on a flat plate for a few minutes to soften. Place the sheet of pane carasau over a bowl and press down gently so it sticks to the sides. Bake in the oven at 180° for about 10 minutes, until well toasted. Remove the bread basket from the bowl and leave to cool.
